Baked Gluten free quinoa and lentil burgers 🌻

Hi everyone,

This 30 plant challenge has made me think about making simple things that are easy to make and nutritious. I made these by boiling some red quinoa and red lentils then mixing them with pumpkin seeds sesame seeds chia seeds garlic with gluten free bread crumbs gram flour and a little water to bind. Gram flour is great at binding so you don't needs eggs so this is gluten free and plant based.

And I had it with stir fried shredded cabbage carrots onions celery bean sprouts. I also roasted some baby new potatoes in their skin at the same time.

Looks great Jerry. Very healthy and I’m always looking out for quinoa recipes. I wonder what the difference is between regular quinoa and red. You are the only person who I know that has ever mentioned the red one. I’ve never to this day seen the red one anywhere. Is it nicer, have you bought the worlds supply lol πŸ˜‚

Hi Ali, I've bought it in Holland and Barretts as I have to be careful which brands I buy and I've also got some black quinoa which's in fact very dark red, I prefer the white as I think its got a smoother taste but like the flavour and texture of the red with things like burgers.

You think I've a monopoly...

I've also bought them in whole food shops but usually buy the white and have my favourite brand. πŸ˜€

Oh so there are a rainbow of colours. I need to diverse. Maybe I will pop into Holland and Barrett’s as don’t usually go there.

did you put the chia seeds in dry?

Hi and yes I did as they absorb moisture from the mix swell up and help to bind it.

As you also like crumbles I add chia seeds to the apple and you can add them to the topping, I also add sesame seeds to the topping. 😊

I have obviously been under utilising chia seeds, I usually just put them in my shakes and smoothies. Crumble it is, definitely :)

It thickens the fruit so its more of a compote...😊

makes sense as that is what they do in my smoothies, makes them filling. Good idea for compote too (whether or not under a lovely crumble :)

I think I remember my brother making chia jam at one time

Those recipes look great - I have diabetes 2 and had to remove most grains from my diet due to food intolerances, but I can eat oats and chickpea which is used to make pasta. Have seen adverts for lentil flour through Nature's Health but don't know if it tastes ok.

Hi there, I imagine lentil flour tastes good and what I do is use a coffee grinder and I grind quinoa into a flour and because its a bit coarser than flour it absorbs more moisture and is better for gluten free baking as I'm a coeliac and not diabetic.

I'm going to grind some lentils now and try them in a recipe so a great idea thank you.

I have bought a bag of cous cous which I am going to try and mix with avocado, olives tomatoes - my old blender has broken so will try to find one - will have a go at the lentils then.

Thanks Rebie I make things to the right consistency so this is how I made them:

thanks, just looked it up on line but it didnt have the seeds. Next time I will use the seeds. However they did add tahini and cumin and then some dijon mustard.
