I was looking for a soup recipe online today and found one by Delia Smith - so I have made it - I'm not going to copy any of the method or ingredients here, as I don't wish to infringe her copyright - but you can find her recipe easily if you look online, and also there are lots of alternatives out there too in various places.

I had bought some Leeks on special offer, so this soup has been very economical to make! I enjoyed it with some wholemeal bread and peanut butter. I also sprinkled a teaspoon of parmesan cheese on top.

The Leek & Potato soup is very tasty. I would certainly make it again. Very easy to make and delicious.
