Here's a weird pie I made earlier with red lentils black quinoa chickpeas and plum tomato filling with a GF vegan topping made with 100g ground golden linseeds ground almonds + 100g GF flour and 100g coconut oil with parsley cumin coriander ginger turmeric and a little sea salt and black pepper. With cashew nuts sesame seeds and a little more ground almonds scattered on top then baked for about 35 mins.
Cashew nuts are OK for diabetics as is quinoa, chickpeas and lentils so as well as being GF and plant based I think the pie is suitable for diabetics too.
I had it with boiled new potatoes and some stir fried veggies from my fridge and I enjoyed it. 😊
