Bank Holiday Monday Afternoon Treat :-)

Hi everyone,

I baked some Banana, Almond & Fruit Muffins this afternoon, and just enjoyed one with a nice cup of coffee.

Here is the recipe - they work out at 306 calories per muffin. I made 12.

Ingredients:

4 small bananas

2 medium eggs

125ml olive oil

250ml semi-skimmed milk

350g wholemeal flour

3 tsp baking powder

1 pinch salt

100g dried mixed fruit

100g sliced almonds

Method:

Mix together all the ingredients - making sure not to 'over-mix' - so that you get a nice fluffy light muffin.

Bake for approx. 25 minutes - I used a Fan oven, and the temperature was 180'C.

I adapted my recipe from a basic one that was on the BBC Good food website - and I omitted sugar, reduced the amount of flour used, and incorporated some bananas. I will put a link to the original recipe here:

I made 12 Muffins with my version of the recipe, whereas the person baking the original recipe baked 20 muffins - hence her calories worked out much less - 205 per muffin, as opposed to my larger ones at 306.

Hi Zest, I think afternoon tea should be compulsory and your banana and almond muffins look a perfect accompaniment. So you enjoy them.😊
