Stir fry with buckwheat ramen noodles for dinner was very nice and the ramen noodles (gluten free as I am coeliac) worked well did not go mushy or gloopy/sticky!

Hi Henbur this looks really delicious and I love stir fries, the buckwheat noodles sound interesting so I’ll have to try some as this meal would be perfect for me too. 😊

Ramen noodles from Ocado they come in a square cake rather than as straight noodles and you pull them apart whilst boiling then rinse in cold water 1 cake per person they are more robust so hold up much better than rice noodles or straight buckwheat noodles. They feel more like an egg noodle in texture rather than the skinny slippery melt in mouth texture of rice noodles!

Buckwheat ones are called, Soba Noodles in case Japanese members are looking at the post.... Thicker ones are called Udon. Just fabulous..

It’s a little more confusing in UK as I have found through trying them all. I don’t find the straight buckwheat soba or buckwheat udon very nice they go soggy. I buy buckwheat ramen! Just to add to confusion the manufacturer / brand name is king soba they also make buckwheat straight noodles, buckwheat udon and rice versions of all those! Here they are ocado.com/webshop/product/K...

Ocado sell the rice or buckwheat versions of soba and udon too if you search king soba you’ll see them all! Be careful just searching soba as products containing wheat that coeliacs can’t have come up!
