Leftover Vegan soup with coconut milk. πŸ₯₯

Hi folks well I had some of my favourite veggies left from a roast so tonight I blended them with some coconut milk and spiced it up with ginger coriander and cumin and while that was cooking I gently cooked some baby chestnut mushrooms in olive oil with turmeric and cooked them until they were crispy...mmm 😊

And I baked some bread earlier so had it with home made GF bread.
