Hi everyone and I hope that you're all keeping warm and safe this cold weather.
Here's what I had for lunch today, I made some GF bread and while that was proving I made some shortbread biscuits with pureed apple and dates instead of sugar and I had it with some fruit and coconut cream.
The shortbreads I made with quinoa flour ground chia seeds and 1/2 gluten free flour mix and I used goats butter as that has a lower melting point and makes the biscuits 'shorter' with one egg and the pureed fruit.
