Slow Cooker Curry

I have made a pot of curry today with carrots, garlic, medium curry powder, lentils, chick peas, kidney beans, tomato puree, passata and pure fructose syrup for a bit of sweetness. I am really looking forward to eating this as curry is one of my favourite foods.

Hi there Jerry, I am very pleased to report that it was the best curry I've made in a while. Originally I started following a recipe in my slow cooker book but I ended up going 'off piste'! I don't often follow recipes and often chop and change ingredients.

Definitely beats fast food and fast food is one thing I do not like.

It looks really yummy, thanks for posting.

I'm inspired to try something similar when I get home, but will only have about 30 mins to do it in, so won't be using a slow cooker :)

You are welcome and it was delicious, love my slow cooker.

You can mix something up quick in 30 minutes and I expect whatever you put together was lovely :)

It was lovely. Also, I have received a recipe in my inbox for a Baked Spaghetti Squash Lasagna Style - this is something else I will be making. I will put the recipe and a picture on this site when I have made it.

I've only had spaghetti squash once & it was really tasty, & a little like al dente spaghetti. :) I hope you enjoy it as much as I did! I'm amazed that squash can taste like other things, kabotchka chestnut squash are my favourite, but hard to get hold of. Onion squash even gave me indigestion the way raw onions do. :(

I've just added the ingredients to my shopping list and will be making it some time next week. We have such beautiful vegetables and can do so much with them.

I watched Ben Fogle on TV in the programme 'New Lives in the Wild' and last week's episode was a guy living in Missouri and he had beautiful leaves everywhere. He walked through the grass and picked some lovely sounding leaves that were much better than salad leaves and with so much flavour, it got my taste buds going that's for sure. :)

I have difficulty eating onions because of the IBS. :(

Looks good but why use fructose? Maybe you can sweeten it by using onions and/or another sweet vegetable?

I used it in a hurry but will give myself more time next time and use sweet potatoes.

When I make curry, I no longer use tomato puree as I find the citric acid spoils the taste and maybe the reason that you want to sweeten it. I now use an Italian Mixed Vegetable Tomato Paste which I find gives a better flavour.

Thank you Phil, I've never seen the Italian Mixed Vegetable Tomato Paste but will certainly look online and see who sells it.

Your welcome. I do like your idea of mixing lentils with beans. Never thought of that before and I will try that next time I make a batch.

Thank you. I love lentils and beans and the mix worked really well, I do enjoy going 'off piste' with recipes. :)

No I haven't tried that yet. I used Fructose Syrup that has been extracted just from apples and nothing else (I didn't have any apples to add to the curry), better than sugar but I will look up Jigari as I've never heard of it.

I think it's usually spelt "jaggery", it's made from raw cane sugar.

In the UK you can get it in Indian super markets and mini stores.

It's very moreish :)
