Today I had some left-over cooked chicken, so I decided to have a 'Chicken & Goat's Cheese Omelette for lunch, and it was really good.
Ingredients included: 120g chicken; 25g goat's cheese; half a large white onion; half a red chilli pepper and half a yellow chilli pepper; 1 large mushroom; 25g butter; 2 eggs and a drop of milk.
It was approx 750 calories, and really delicious and filling.
