Chicken & Goat's Cheese Omelette

Hi everyone,

Today I had some left-over cooked chicken, so I decided to have a 'Chicken & Goat's Cheese Omelette for lunch, and it was really good.

Ingredients included: 120g chicken; 25g goat's cheese; half a large white onion; half a red chilli pepper and half a yellow chilli pepper; 1 large mushroom; 25g butter; 2 eggs and a drop of milk.

It was approx 750 calories, and really delicious and filling.

I had frittata last night - 5 eggs between two people with thinly sliced sweet potato, courgette, red onion and dill. It was really good but as I'm dairy free there was no cheese or milk in the mix. Next time I'm considering adding a bit of almond milk to make it more moist. I also like the sound of that yellow chilli pepper :)

Mmmm, your Frittata sounds good, Ruth_canal_runner - and yes, the Yellow Chilli Pepper was good - I bought a collection of chillies - red, yellow and green - so I'm enjoying trying them all out.
