Lunch -an experiment

I saw a recipe for a filo tart so thought I would give it a go.

It uses one sheet of filo pastry quartered and brushed with egg. Place the 4 sheets on top of each other then fill with a dab of tomato puree, half a tbsp of ricotta cheese and fill with any cooked vegetables. I sliced courgettes tomatoes and yellow pepper. Cook 180c for about12 to 15 minutes. Made a lovely light lunch.

I am going to try this with other vegetables in the future. Feta cheese would be a nice addition.

Hi Roset16 ,

Your Filo Tarts look lovely - I bet they were tasty. You've reminded me that I was going to try a recipe for Spanakopita (Greek Spinach Pie), and I wondered if you'd tried that? You mentioned adding in Feta cheese, and I think that is an ingredient in the Spanakopita - so you might like that too.

I have also prepared a spinach , ricotta and feta pie with filo pastry for my family dinner tonight, so I'll try a small slice with asparagus and new potatoes. Not too heavy on calories but still need to work it out per slice before I decide how big a piece I cut😁.

Just worked it out. The pie will be 280 calories per portion. I am happy with that.

Just had a thunder storm so the air feels cooler.

I must try that. I bought frozen filo pastry recently as I needed a minimum purchase to get cash back. (Don't ask. It's a rural area. The only hole in the wall was out of action)

Maybe it was puff pastry . Would that work?

Might be better to use the puff pastry as a topping . It could be soggy underneath. If you used it as a tart. Or blind bake first then fill the tart.
