I don't eat bread because the gluten in it speeds up the absorption of the starch (leaky gut) and causes spikes in insulin levels.
Before I was diagnosed a coeliac I loved nice bread and used to buy an over night dough loaf, which's a traditional way of baking bread.
Now I bake my own gluten free bread.
I’ve tried and failed to make bread from various gluten free bloggers.

I started by making bread rolls as they’re a smaller mass and easier to rise so good luck as gf bead making is very doable.

I don’t eat bread very often, but when I do, my favorite is crusty garlic bread. Soft and chewy inside. Warm preferably. Gotta make those extra calories worthwhile.

I make my own bread based on millet and buckwheat flours, buckwheat groats and pumpkin and sunflower seeds. The loaf feels like a brick, as I only eat bread once a day, and only one slice at that, I find it wonderful. Does anybody else where make such bread?
Whole meal and organic made at home in a bread maker. We eat a loaf a day so it’s always fresh
My favourite was always a crusty baguette, although probably something I only eat once a year now?

None of the above. I make my own spelt soda bread as I'm wheat intolerant and I like Schar gluten free multigrain ciabatta rolls. But I don't tend to eat much bread as a rule. Maybe a pack of 4 rolls and a couple of slices of the soda bread as toast in a week. I'm more likely to eat some kallo corn & rice cakes or a couple of slices of ryvita crispbread with some cheese or granovita mushroom pate.
Baguette if I'm looking for comfort food, being naughty. Aldi's Ancient Grains is great though and a very reasonable price at 79 pence a loaf.

I'm in the UK, but have been an Aldi/Lidl fan since the 80's when I lived in West Germany, we have 3 Aldi's within a 5 mile radius, but both Lidl's are over 8 miles away so we just go to Aldi now, as Lidl stopped doing the cat litter we liked. 🐱🐱

Sourdough. It's the only one I seem to be able to tolerate. I only eat it toasted and it crisps up brilliantly. I have it very rarely.
I usually eat gluten free multigrain bread and either have peanut butter and raspberry jam or multiple flavors of cheese and mustard for cold sandwiches.

Bread with seeds. Dave’s killer bread. Whole Foods has one that is fantastic toasted with some olive oil.
I’ve given up most breads because of gluten, and gluten-free is sometimes not easy to chew and swallow so - I make whole grain buckwheat flour pancakes instead, quick to make without using oven, may experiment with adding other gf flours, would cornmeal mixed in work I wonder?

Organic home baked sourdough about once a month as in my own research bread isn't that good for health plus I can't have it too close to my iron supplements.
I'm the sinful one. My fave bread is the cheap white medium sliced from Tesco . Cus its cheap, i eat too much bread and its one of my favourite comfort foods.
Wholemeal bread, because of my bowel problems.
I make my own Wholemeal soda bread - just 4 ingredients, Stoneground Wholemeal flour, baking soda, salt and buttermilk. I like to keep a loaf of Vogels seeded Wholemeal in the freezer as a back up but they have production issues at the moment and have temporarily stopped supplying it. Once a week treat is a sourdough Olive roll. I’m thinking of experimenting and expanding my own bread baking possibly getting a bread maker.
I make all of our 100 wholemeal bread we never buy shop bread. Recently I experimented with a bread made with 85% wheat flour and 15% rye flour. It makes a bread with a very nice flavour. We bought a stone mill about thirty rears ago and so mill all our own flour immediately before cooking. With the recipe I use I can make two 850 gm loaves in 1½ hours including rising and cooking. We buy our grain once a year in September from an organic farmer.
I like my wholemeal bread it is very healthy and full of vitamins and minerals plus fiber. 2 a day max is enough for me and for anybody as it all comes down to moderation as we all know.
