As a vegan, I eat far more than listed.
In summertime when it is hard to think of cooking meat or anything. I usually choose salads on a wrap. Today I had lettuce, tomatoes, chickpeas, onion with sweet chilli sauce on wrap. I usually have it with ham and cheese as well which are not plant based I know. I'm not a lover of broccoli but I eat it for the iron content every now and again. I love lentils and butter beans in water and every now and again I like to eat nuts too

What is " Seitan " ?
It's a vegan protein, that has a texture a bit like sliced ham I think? Made from gluten
I mean, it's not made from gluten, it's just gluten.

It is not. I made it once, just to see. It involved kneading bread flour together until a lump of gluten forms, then rinsing off the carbs.
Then tamari, because even though it is literally all wheat, you must have wheat free soy sauce.

Horrible ๐ lots of people like it. I donโt hate many foods but I hate that one.
As you know we can't get enough vegetables. Have fruit almost every morning for breakfast with Quark and my own rosehip syrup or local honey. Ryvita and bananas or oranges for lunch. Always at least 3 veggies for dinner.
What is both Quark and Ryvita? I never had those out here before.
Quark is fat free soft cheese. You can use it straight from the tub on fruit etc or stirred into soups, sauces and pasta dishes to add a creamy taste. Ryvita is just a rye wheat crisp bread which I spread with very low fat cheese triangle and chopped banana for lunch.
Thank you for the information on both Quark and Ryvita. I'll have to see if we have Quark out here the next time we have pasta. Sounds like a good idea for pasta nights.
Quark? I thought that a Quark was a theoretical sub atomic particle? Sounds pretty " cheezy" to me๐
Yes cheesy but very useful as an addition to sauces. Provides extra protein.

I hate all vegetables, and only eat broccoli, cauliflower and beans when I have to... Being forced to eat vegetables as a child has put me off them for life!
All of the above except vegan cheese (too much fat/little nutrition) and seitan ( wheat intolerant). My list of what I eat is also very extensive. I just had a home-made mushroom strogonof made with a silken tofu "sour cream" over brown rice & quinoa with sunflower seeds for dinner. Second time I've made it. The sauce still needs a little tweaking but it was much better than my first attempt. I also have to eat 65 - 85g protein a day for medical reasons so 22g is good for a main meal for me but I generally still have to supplement most days so you can add vegan protein powder to the list.

We usually use tofu for whenever we have meals with rice/quinoa and/or noodles that are gluten free.
You just need a pack of silken tofu, a couple of tablespoons of lemon juice and some garlic powder to taste (optional) to make the sour cream. I used 1/2 tsp. Whizz it up in a blender and add a couple of tablespoons of water if needed to make a thick creamy consistency. Then just make up your strogonof as usual and it goes in at the end of cooking. You just have to be careful to reduce the rest of the sauce on the mushrooms enough so it doesn't get too watery. I used chestnut mushrooms (baby bella ) as they have a nice bite.
I've selected all but seitan/tofu. Tofu doesn't suit my digestive system and seitan is pure gluten!
We've also been enjoying a lot of vegan BBQ foods this summer, as a few friends have turned veggie.

I chose the first 5. However, vegan cheese very limited even saturated fat is less than 20 percent. Others are gluten intolerance and no soy/tofu except edamame as snacks sometimes. Lots of veggies and fruits ofc. ๐
I tend to like Brussel Sprouts, Carrots, Potatoes- boiled in their skins, Onions- cooked either With A Dish, or In a Dish. I also like Sweet Corm- either On, or Off, The Cob.
I enjoy many fruits, especially Strawberries IN 'Season', there are also some 'good' Raspberries around too. One I Don't see often is Gooseberries- a Slightly 'Tart' fruit, rather like Red Currents.
Quite a few I haven't Mentioned too, I'm sure.

Basically all of this and more except for Seitan. I have a gluten allergy. Seen some people do yummy looking things with it, but haven't ever been able to partake.
I've never heard of Seitan.
8 donโt normally eat soy cos a large portion of soybeans are GMO and sprayed with Round Up or some pesticide that has glyphosate in it.
Yesterday I managed 28 plant based foods, today I had chia pudding for breakfast which means so far in two days Iโve had 30.
The Chia pudding sounds great! What else did you have with it?
I mixed the chia seeds with koko original milk left to thicken for 30 minutes then topped with some fresh fruit salad, there were about 8 different fruits plus a little honey and chopped mint.
I eat most of the above, except for Seitan or Quinoa. I do like to get as much varity as I can.

These sound like great choices for plant based meals/sides. I eat quinoa and add it to certain meals for the extra protein or substitute it for rice now and then.

I love my plant based and vegetarian meals. I also enjoy fish and chicken as well but I don't eat red meat I won't even touch the stuff. When I eat my vegetarian and plant based meals I love it so much that I don't give red meat a moments thought.

Which vegetables do you add to the quinoa/rice combination?
My mum and myself add brocolli and peas which is a delicious combination.with it. The quinoa we get is the one from iceland (zesty bean steam bag), which is delicious it is also great and very healthy if you've had a long day.
The broccoli and peas sound like a very delicious combination with the quinoa. I will have to see if we have both items and add them the next time we have quinoa as a side dish or as the main part. Thank you the idea!
Quinoa is so great for summer because it works well cold. Just cook up a bunch in a cooker and put it in the fridge. In fact I need to do that right now! Farro is a new to me grain discovery. It is so nutty and hearty.
