I like broccoli, sweet corn and peas, too. They go well with salmon patties and/or other fish/meat dishes that we have for dinners. :-)

Green bean casserole is a very American dish. I don't think I have ever seen it outside the USA.

Wikipedia says it was invented in-house for Campbell's Soups.

A poached egg on top of spinach and chard is a perfect quick breakfast, lunch or light supper.

Chard is good. I have a chard, Meyer lemon lasagna recipe I haven’t made in forever. You eat the lemon with the peel.

We love all vegetables and fruit. Just started picking our soft fruit from the garden, loads of strawberries and raspberries. Had the first of many courgettes on Friday evening, the plants are really getting busy. Onions looking good and peas and beans are flowering.

Tonight we had a slow cooked pork casserole with lots of vegetables. Pudding was a crumble made with our own rhubarb and gooseberries given by a neighbour. I added stem ginger and a little of it's syrup, topped with a healthy crumble. Loads of cooked fruit left so in a dish in freezer. Raspberries and strawberries we shall have for breakfast topped with Quark and honey.

Tomatoes are a fruit and peppers are a vegetable;) corn, jalapeΓ±o, prefer broccolini, cherry tomatoes, avocado.

Not often! Eggs, chili, baked poppers , chilies are great in salads and anything pretty much. A fave is roasted poblano with beans, corn, salsa and topped with mashed avocado mixed with lime. Try them with peach preserves, beans of course , … in august we have roadside stands that roast pueblos… Colorado’s answer to hatch chilies.

This sounds really good and delicious. We had salsa recently with a meal one night for dinner. It had some avocado in it. It was a little spicy, but good. :-)

To be frank, I eat all of them in a mix of recipes .I also like aubergine and courgettes. Both roasted, and cauliflower purΓ©e with garlic.

Although I’m not a vegetarian.

They are now about 1 inch long, once they appear they grow fairly quickly. But will need to be 6 inches or more to be good enough to eat.

I just love asparagus in summer. And I always keep some sprouting seeds to hand to scatter into salads. It's so easy and quick to get them to sprout in summer months. I love their fresh crunch in salads and stir fries!

Beetroot, cucumber, kale, asparagus and broccoli. For me, beetroot is essential in a salad and I’m going to try it in other ways because I love it. I try to eat a wide variety of veg. and salad every day. πŸ™‚

Other: Baby bella mushrooms, sugarsnap peas, radishes, broccoli, cabbage, spinach, peas, baby corn, sweet potato and new potatoes, red onions, scallions, plus all the above in stir-frys and salads. And I like raw beets in salads too when I can get them. There's not much that hasn't found it's way into a salad I've made at one time or another. I just love raw veggies and can often be found snacking on a carrot in preference to potato chips.

Hi Leah a great poll I do really like new potatoes especially with a big salad and cook them in their skin. I’m buying local ones at the moment so even better. My favourite salad veg is baby plum tomatoes and I eat lots every day and I love different varieties of lettuce. 😊

This sounds really good about the new potatoes and big salad. I had a big salad last night for dinner with purple cabbage mixed in-- along with a few other vegetables.

My favorite vegetables are: Green Beans, Carrots, Lettuce, Bell Peppers/(Cherry) Tomatoes.

When I changed my dietary habits in 2017 after a heart attack attributed to stress and sugar, I was advised to avoid any the whites: sugar, bread, rice, pasta and potatoes. I don't know if there is science underlying this, but a vegetable centred eating regime with sweet potatoes at it's core seems to have kept my arteries happy and has done wonders for my dental bills. (My dentist can't believe the lack of decay, given my previous record!)

I eat the sweet potatoes the most because they have less carbs. in them than the regular baked potatoes. :-)

We don't eat celery, as lm allergic but eat every other vegetable if available.

I think I've picked nearly all your options :)

I tend to crave salads in the summer (although not as much this year). I eat most of the other foods throughout the year, but I do like carrot sticks for a refreshing/cool summer snack.

All three are on my list of favorite vegetables and fruits. I have Brussel Sprouts mostly for side dishes along with broccoli and peas-- unless I can add everything to certain meals as dinners ( quiche/pasta/stir fry). :-)

I've been brought up to eat healthy so I love my veg at anytime of year. I love my Green Beans, Carrots, Cucumbers, Tomatoes, White Mushrooms plus many more veg.

A great way to get people communicating about eating healthy especially when it comes to veg as they contain many nutrients to keep your mind and body healthy.

Would you consider doing polls about plant based meals as well?

Also own grown courgettes sauted in a little oil and dried herbs served with crumbled feta cheese, we leave some to grow on to marrows (delicious stuffed with mince and veg or sausage meat and S&O stuffing) just about to pick the first runner beans and potatoes...Happy Harvest
