By 'Spanish Omelette' I'm including similar things like frittata with chopped leeks and spinach

Great vegetables, also spirolizer Carrots And Baked Sprouts /Halved and dusted Breadcrumbs and grated Parmesan cheese!

I picked Other since it's all of the above. I like certain pasta and rice dishes along with Mexican and other vegetable dishes, as well. Cauliflower and cheese is one of my other favorites to have as a side dish.

Excellent poll Jerry and my favourite is Vegetable Casserole out of all of the above as I love a 'mixed up' dish with lots of vegetables.

My other is a South Indian vegetarian curry with chickpeas or lentils. If fact any medium spiced vegetarian Indian dish which doesn't contain wheat! Yum!

It has to be an oven baked crispy Jacket Potato, either filled with chopped up cherry tomatos, red onion and mixed peppers all covered in Basil Pesto sauce or with Amey's thick organic lentil soup ๐Ÿ˜

Favourite vegetable dish is roasted vegetables - red & yellow peppers, courgettes, aubergine, small charlotte potatoes ~ roasted with fresh herbs and garlic, served simply with melted crumbled feta cheese on top, or else mixed with herbed quinoa.

Also love vegetable pasta dishes - for e.g., spaghetti with roasted butternut, kale and toasted pine nuts...or with artichoke, fresh thyme and parsley.

It's a Rose Elliott recipe:

Fry an onion til golden, add a clove of garlic, tablespoon of rose paprika, and 900g of dice potatoes, cook for 2 mins. Add 400ml of vegetable stock, and simmer (covered) for 20 mins (until potatoes are just about cooked), add 200g mushrooms and cook for 3 mins.

You want to Syphon off a lot of the stock, and mix it through with 150ml of sour cream, before adding it back to the potatoes.

I serve it with cauliflower, broccoli, green beans. If you want more protein, she recommends slicing a boiled egg to go with it.

I chose other as i love all of the choices and too difficult for me to choose but at the moment im eating far less potatoes, pasta and rice than i used to ๐Ÿ’š

Baked potato should always win because of potatoes are very satiating, and if no fats are added they are very slimming!

Picked "other" as my favourites vary with the season, though I like most you have listed ( don't like pasta or rice )

My current favourite is roasted tomatoes, peppers, corgettes and sweet potato. Drizzle with a little olive oil and herbs, I do a big roasting dish then it lasts for several meals with different things added, like cubed feta cheese or quorn sausage.

Another winter favourite is vegetable dhal - I throw in whatever needs using up with lentils, veg stock and curry powder, simmer till its soft then stir in a tiny bit of creamed coconut. Freeze it in microwaveable containers and it's great to take to work.

I could live on fluffy, crispy skinned jacket potatoes. Unfortunately I'm type 2 diabetic and carbs send my blood sugars soaring. I love roasted vegetables and although root veg still contain carbs they're much lower carb than potato.

My fave is Spiced Savoury (vegetable) Crumble. Do I need to give recipe? Diced onions, celery, courgette, carrot, peas, sauteรฉd with ground cumin, coriander, turmeric and chopped ginger. Simmered 20 min with veg stock and tomato puree and lime juice. Toped with wholemeal flour and oatmeal crumble and sunflower seeds and baked for 30 min til golden. Yumm!

That looks good!

Here is recipe for mine. (Which was a originally a Sarah Brown recipe). But there's lots of flexibility possible for the veg. Parsnip or sweet potato instead of carrot, squash instead of courgette, etc. I will try and send a picture

FOR 4

8oz (225g) celery, 8oz onion, 8oz courgettes, 8oz carrot, all washed and diced

Olive oil or coconut oil

4oz peas

2 tsp (or more) cumin, 2tsp coriander (or more) fresh ground

1 tsp turmeric

3 cm ginger finely chopped

1 tsp mild chilli powder

2 cloves garlic crushed

1 tbs tomato puree

3/4pint dark veg stock

Zest and juice of a lime (optional)

Crumble

3oz (75g) wholemeal flour

2oz (50g) butter

3oz oats

1 tbs ground almonds (optional but adds protein)

2 tbs olive oil

Sunflower seeds

Fry onion and garlic in oil till soft. Add spices mixed to a paste with water and cook for 5 mins stirring frequently. Add the diced veg and peas and cook 2 mins till coated. Add puree, stock, salt and pepper (plus lime juice and zest if using). Bring to the boil cover pan and cook gently for 15 mins or so. It should thicken a bit.

Transfer to 3pt/ 1.75litre oven proof dish

Meanwhile prepare crumble. Rub butter into flour, stir in oats and almonds and sunflower seeds and mix in the oil (this sounds weird but it makes a crispier crumble). Sprinkle over the veg and bake for 25-30 mins at gas 5 or 190 centigrade.
