Having developed reflux since my gastroscopy, I am plagued with a sore mouth - red tongue and roof of mouth. Lansoprazole and omeprazole have both made this worse, so I feel I can't medicate for the reflux.

A red sore tongue can be associated with low vitamin B12 and/or low iron.
The fact that the drugs (both are PPIs) make this worse, suggests to me that could be a deficiency symptom. PPIs reduce stomach acid, which makes it harder to absorb nutrients from food. They made my mother very ill - she only noticed when she missed a dose, and felt better that day, but worse again as soon as she took the missing dose.
If your sore tongue/mouth were caused by reflux, then the PPIs should have made it better not worse. They do relieve reflux symptoms even if they are a bad idea to take long term.
Am a bit worried by the fact that this started after the gastroscopy, as I am booked for one later this week.

I have had reflux for several years and whilst it caused heartburn, discomfort and made me cough, I never have had a sore mouth with it. Are you anaemic? This can certainly cause the symptoms you describe..
My reflux has disappeared since starting lanzoprasole.
