Eskal choclate wafers are my favourite biscuits and they use potato starch:

goodnessdirect.co.uk/cgi-lo...

Ingredients

Milk chocolate (40%) sugar, cocoa butter, full cream milk powder, cocoa mass, emulsifier (soy lecithin), salt. Wafer (60%), sugar, vegetable oil and fats (non hydrogenated), potato flour, cocoa powder, emulsifier (soy lecithin), salt, vanilla extract, raising agents, (sodium bicarbonate, ammonium bicarbonate). Milk chocolate: min cocoa solids 35%, min milk solids 15%.

And you can buy plain gf flours like Rice flour, potato flour, quinoa flour chickpea flour tapioca starch soya flour etc. I'd try your local Health food shop and whole food shop. Some Asian shops stock rice flour and at a keen price.

He can have these then:

I also imagine that coconut macaroons like Mrs Crimbles are gf as long as they are not the chocolate ones.

I have to avoid maize and I get Barkat rice bread on prescription - it's pretty good toasted, but not good if you don't. I also get rice flour on prescription.

I don't know about biscuits as most things contain soy, which I also can't handle, but there are some brands of amaretti biscuits which are safe - Virginia Amaretti and M&S (plain packaging, not gift packs). Not too cheap but lovely.
