Gluten-free diet for picky eaters?

I have celiac disease and my 5 year old was recently diagnosed with it. He also has autism so he's very picky about textures in food and has a limited amount of things that he will eat before his diagnosis. His favorite right now is avocado toast, but he won't eat any gluten-free bread I've found (and I've tried like every kind) because the texture is off. The same with mac and cheese. Luckily, he likes most fruits and cheeses so we've been living off of those for the time being but he's hungry all the time and won't eat anything else. Any suggestions?

If you can get GF pasta, perhaps you could do your own mac & cheese? I don't know what GF products you have in US, but we can get decent GF pasta in UK. Brown rice pasta has a very similar texture to the regular stuff I think. I suppose it is trial and error for you. A couple of family members have autism and can have issues with textures of food. You will work this out Mama.

Thanks. All the gluten-free pasta I've tried has a different texture/taste and he won't eat it unfortunately. I'll keep looking.

The original book is called ‘Breaking the Vicious Cycle intestinal health through diet…’ by Elaine Gottschall. Anyone with Celiac Disease should read it if they can. Autism chapter may be helpful.

If your son can eat other grains, then this is easy. There are plenty of GF and grain free pastas and crackers that you should be able to find in any health food store. And, there are quite a few brands of decent GF bread available now. It's those of us who have to remain grain free that have a tougher time if we want any kind of pasta or pastries, etc

What brands would you recommend? I can find a lot of GF products, the problem is that he won't eat any of the GF products I've tried so far because the taste/texture is different.

Does he like pasta? I had stopped eating pasta, because most types of gluten free pasta contain mono and diglycerides of fatty acids and also glucose. The only alternative is usually mais pasta or rice pasta. Then I found out about teff pasta (100% teff). It’s not easy to find; you can only buy online from an Ethiopian company. Teff pasta is much more nutritious than “normal” pasta : it contains much more iron, for instance. I like its texture and it’s really nice it cooked al dente. If you have time -and patience- you can also make teff rolls and crackers using teff flour.

Will he eat salmon ? Have you tried Canyon Bakehouse bread? Must be tough. Hope you figure it out

Hello.interesting post.I love bread too and have not found anything i enjoyed until i found a farm type cob by Genius.
