Crispy duck pancakes recipe?

The duck is in the oven and I've found an acceptable looking plum sauce - I just need the pancakes! The normal recipe would be plain flour, boiling water and veg oil. Has anyone tried to make a gf version? I have doves gf plain flour, rice flour, corn flour, and xanthian gum in my cupboard.

Hello, this probably isn't very helpful - five hours later. We have some rice paper discs (rice and tapioca flours, and salt). They are from Vietnam but we buy them in a chinese supermarket.

The discs are surprisingly hard and tough, first soak in water and then experiment. Will do a spring roll when deep fried and can be used as wraps when softened.

Hope you solved your earlier duck issue.

How did it go? I use little gem lettuce leaves, they make very acceptable cups for crispy duck!

Just substitute the plain flour with GF plain flour

the rice paper discs are like eating rubber (a condom).the lettuce leaf is a good idea abit like yuk sung .but also have i tried bread wraps with some success .

ps you can deep fry these too to make spring roles, milk and egg to stick them in what ever parcel you decide.

Thank you everyone, I just used the gf flour instead of plain and it worked really well! I do like the lettuce leaf idea though.
