I plan to make a trifle for pudding on Christmas day. Can anyone suggest suitable sponges for the base? I do like the warburtons lemon sponges and may use them..

I'm not the worlds greatest cook/baker and I am going to be too preoccupied cooking Christmas dinner.. lol.. The stress levels will be high

I've just made my trifle with raspberries in the bottom - no sponge. I figured it would just disintegrate in the jelly so I left it out. I'm going to serve it with tuille biscuits on the side instead.

i buy a plain gf cake witch works as good failing that make fairy cake in advance and freeze them till i need them in fact making some today good luck xx

I get a sponge kit from sainsburys or Asia and I use it for puddings just make a sponge and then cut it up as just need to add eggs and marge it's quite nice sponges and under 2.00 so cheaper too.

I've made them before but it will go soggy. To overcome this I baked my own sponge, cut it into fingers and then baked again to dry them out a bit. Worked a lot better!

My cousin made a trifle with amaretti biscuit base. These are gf and it was delicious.

Any gluten free sponge cake works, I also use sugar free jelly and put berries in it. and sweetness needed use Dalfour jam, as it's all natural no sugar added and it will keep the blood sugars in check too!

Hi I mix up a batch of buns and they are great as a trifle base. classic mixture 4oz butter, 4oz sugar, 4oz sr flour, 2 eggs. I use either Doves Farm or Wellfoods gf flour. never had a bad batch...great for tiramisu as well :)

Marks and Spencer do a great made without wheat victoria sponge, i'm not sure if this is gluten free though, you would need to check the label. My dad always made the trifle on Christmas eve and put the cream on top just before serving, works well. Good Luck!

Thanks for all the replies and recipes guys, I may give the baking a bit of a go under less potentially stressful circumstances. I have bought a GF madeira cake and will use that as a base..:)

Try using some twice-baked Almond Biscuits well in advance. It's a universal recipe, so here's one from Delia to adapt.

Use gluten free flour. Miss out the whole almonds. Make sure the baking powder (Dove Farm) and almond extract (Langdale) are gluten free (obviously).

Hi. I make my own sponges with the mix from Glutafin I get on prescription, and they are very light, even mt friends and familycommented on them. Can't beat home made, and only takes minutes to mix. Good Luck

I make an extra home made sponge cake, cut it up and freeze it and then it's ready whenever you want it :0)

Yeah I've made my own too but def goes soggy too fresh, I have no choice again this year left it til last minute lol
