2 1/2 lbs granulated sugar

1 can evaporated milk

2oz butter

1 tsp vanilla essence

Heat sugar, milk and butter in a large pot, slowly until sugar is dissolved.

Bring to a rolling boil, stirring all the time so it doesn't burn and stick to the bottom of pot, for 20-30 minutes.

Add vanilla and beat, I use hand held mixer, until it begins to set.

Pour into a greased baking tray.

Allow to cool for a little while and cut into pieces (it's easier when it's still fairly soft) let set.

Hi Suffolklass, you just brought back memories of my childhood in Scotland where this recipe was very popular. Every week-end my mother used to make a tray of this. It didn't last too long though! xx

This brought back memiors of my mother making tablet for the guisers at Halloeen back home in Scotland. Think I will make some myself tonight.

Oh that sounds wonderful...I have never heard of such a good treat..

I can only imagine how creamy this dessert would be.

I hope you give it a try and like it. It does burn quite easily as I found out this week when I left it for about 20 seconds.

Is it a bit like Kendall mint cake (without the mint, though, lol)? If so, bet it would be nice dipped in melted chocolate and left to set.

Does anyone have a good recipe for bonfire toffee? I used to get those lollipops set into a foil cake tin when I was younger, but any bonfire toffee I have had since then just doesn't match up - it's normally full of e-numbers, and not home made at all.

Sorry Glenys, I've never had Kendal mint cake so I can't tell you. But I did think about adding some chocolate to it...

Is bonfire toffee like crunchie? Can't remember what we call it in Scotland but have made some if it is, will try to find the recipe I had for it.

Ay :-) try dipping it in chocolate once it has set - I imagine it will be yummy! Crunchie is more like cinder toffee, so I can see where you got that from , ie cinders and bonfires, but bonfire toffee is like a cross between treacle toffee and a boiled sweet.

If you can find the recipe for cinder toffee that would be good too, as I don't think I have come across that anywhere yet, and it's got to be fun to make :-)

No it isn't sorry. You could maybe try it using Splenda or something similar?

I could, but I doubt the flavour would be the same. My husband used to love tablet, more than fudge actually! XXX
