Sprouted Fenugreek (Methi) Seeds Salad - Healthy addition to a Meal

Methi seeds as such have a bitter taste, but once sprouted it tastes yummy. They have a special soluble dietary fibre which lowers the rate of digestion and absorption of dietary carbohydrate which limits the the rise in blood sugar after the meal. Further they have an amino acid called 4-hydroxyisleucine which improves insulin sensitivity.

They are very high in protein which is from plant source, hence suitable for vegetarian and vegans. Sprouting is known to increase the amount of protein and the dietary fibre and thus enhances its nutritional profile further.

Blood sugar response to Sprouted Methi Seeds:

I tested the blood sugar response of Sprouted Methi Seeds and I got the following results:

Quantity: 50 gm raw weight

Preparation: overnight soaking in fresh water at room temperature and after draining the water it took three days to germinate into a tasty sprouts. For blood sugar test, I ate just the sprouts without adding anything.

Blood sugar before eating: 109

One hour after eating the sprouts: 116

Two hour after eating the sprouts: 105

For comparison, my blood sugar peaks up to 200 on Oat + Wheat Cereal with skimmed milk which used to be my regular breakfast in the past.

I have done this test several days and they seem to be consistent.

However, one should note that everyone will respond differently depending on individual condition of the pancreas.

Fenugreek (English name) is commonly known as Methi in many of the Indian languages.

Fenugreek or Methi seeds are bitter in taste, they are used as one of the spices in curry dishes. They are also used in many traditional medicines.

One/two teaspoon methi seeds soaked overnight in a glass of water and drinking the water and eating the soft seeds did not make any measurable change in my blood sugar over a period of three months or so. Perhaps the quantity was too small to be effective.

Sprouting the seeds improves their taste immensely and it is easy to consume in larger quantity as part of a meal rather than as a medicine. It is even easier to digest like any other sprout. The low post-postprandial blood sugar can be observed from the first meal itself. That will result in lower HbA1c if other high carb ingredients used in the meal is replaced with sprouted methi seeds.

What quantity of fenugreek seeds can be consumed ina day as sprouts?

I did not find any information on the safe upper limit of sprouted fenugreek seeds. If you have eaten moong bean sprouts, fenugreek seeds can be eaten in similar quantity.

I usually make sprouts with 4 table spoons ( 50 gm approx.) raw seeds. They become quite voluminous after sprouting. As a side dish it makes two portions for me.

Thanks. It may be worth adding this in your diet at least few days in a week. It is better to use drained water also as morning tea or in any curry that you may be preparing. I usually make a cup of tea with this, heating it and then adding small quantity of grated root ginger and some lemon juice. This is my first morning drink, quite refreshing.

The idea of germinated fenugeek is fantastic.Actually after germination its energy increases and fibre.It is this fibre which play a crucial role for suger management.

You are absolutely right. Just taking one/two spoon methi seeds soaked in water does not do much because the amount of fibre is tiny.

By germinating the seeds one can consume in good quantity as a part of meal and get the benefit of significant amount of fibre and the amino acid to control the blood sugar.
