Heating cooking oil to cook food, will this cause oxidised cholseterol?

Like everything else surrounding cholesterol, this subject has two extremely opposing views.

I cook with saturated fat because it is more stable when heated, I use ghee, butter, coconut oil, lard. Other people would regard this as unhealthy. I put olive oil on salad.

Not come across any tests for this.

Hi bigleg, thanks for posting read about fats and oil. second-opinions.

makes for good reading. Things i wasn't aware of. Having had a TIA ime glad to be aware of different fats, oils, and everything that's put in the food chain etc, will keep in touch. Regards. Allyg.
