Quite proud of myself πŸ˜‰

Started this new antiacid, anti-inflammatory diet last week. It was time I started a new hobby, as I can’t do my embroidery anymore at least I can cook. It is also good for Bea and her post shingles chronic fatigue. And it keeps me active, shopping for strange, unknown health foods πŸ˜ƒ and moving around the kitchen!

So last week I made buckwheat pancakes, lovely stuff, no gluten in buckwheat and you use almond milk so no lactose either as Bea is intolerant to gluten and I am to lactose!

Then I made some low-fat sweetcorn fritters, a nice fennel and apple cold soup.

Today I made this pie: Pizza with potatoes and Rosemary

60gr of no gluten porridge oats

60gr of quinoa flakes

30gr of chopped almonds

2 tbsps of chia seed

A pinch of sea salt

125ml of boiling water

Mix it all

Add 1/2 a grated courgette

1tsp of olive oil

Mix and form into a ball and flatten it in a well oiled pie dish

Preheat oven on 250C.

Now for the garnish you use what you want.

I had already cooked new potatoes in the fridge so I sliced them and cover the bottom.

I chopped 2 onions and some mushrooms to cover them, then sprinkled rosemary, salt I don’t like pepper πŸ˜ƒ and a little olive oil.

Put in the oven for 20mn.

I found the base a little undercooked but enjoyed it, I have a lousy oven. Anyway I will warm it up again for tea that should do it.

The problem with good food is you cook for a couple of days, you turn around and half the pie had gone already!

So from meditation πŸ§˜β€β™€οΈ to flowers 🌷 and now recipes!

Hi I’m new! But I love your sense of humour! I wish you better health and happiness now that summer is coming soon! Plus I love food and have loads of cookery books ! Plus chucking in brandy or wine into the mix!

It looks lovely, I love mushrooms. I enjoy cooking too and am always using books and looking online to make new healthy dinners. My husband is a bit of a fuss pot but my kids like pretty much anything so they try out my new recipes. None of us have allergies which helps.

I still like the odd unhealthy take away though, can't beat a good fish and chips every now and then!

All sounds fab but that pie looks amazing, I so love mushrooms. Making me very hungry but unfortunately bedtime so can’t partake in a bite to eat. Cooking such a wonderful hobby - enjoy 😊

Your pizza sounds very tasty. Although I can do needlework, I find cooking too difficult to enjoy. The arthritis in my hands and wrists means I can’t open bottles, jars or packets, nor can I lift heavyish pans and dishes. At the moment my cooking is limited to chilli cooked in the slow cooker!

I replaced the almonds with Pecans and used Semolina instead of Quinoa. We ate the left overs on a sandwich the next day and we enjoyed it yet again. Great recipe. Best wishes from Oz.
