That looks great Davey. Would love to share it. If only 😊. Hope you are doing as well as you can today. Lot cooler near me so much as I like the sun I'm a bit fedup of melting. I meant to ask you does the restaurants/ tavernas near you do a dish called Spetsofi ( not sure if that's the right spelling). I used to have it in Kefalonia on holiday. It's like village sausages in an onion and tomato sauce with green pepper. You seem to be an aficionado on local Greek food. 😋

Yes we do it here and you will find each island it will be made different they all use different herbs from island to island . My favourite meal is stifado and also seftia but you can never go wrong with pasticheo

Take one of each pepper take too off take out seeds but keep lid boil some rice add garlic butter when rice is drained some peas and prawns fill each pepper and tomato if you have used a large tomato with rice mixture pop lids on pop in oven for about twenty minutes

The trouble today is people have forgotten about cooking if it comes in a box and goes ping it's edible . It's not healthy but edible and it will never taste like it truly should . They have forgotten how real food tastes . I have made it my goal to cook at some stage every proper meal I was brought up on .

I taught myself to cook from Katherine Whitehorn's book 'Cooking in a bedsitter'. Absolutely idiot proof for hungry students. People nowadays are discouraged from starting small and working up. They're told you need to buy a sauce for Spag Bol or Chilli con Carne. You can even buy frozen jacket potatoes.🤪🤪🙃😕

The food today tastes like the package it comes in and there's probably more goodness in the package than the food . The humble potato as so many uses but it's reduced to being a chip 😔

Pasticheo is like lasagna but tube pasta covered in bitumel sauce and cheese you can have it hot or cold and lovely with salads

Is that where they parade the statue in the square and block the main street to the airport? When I stayed at the Belvedere on the edge of Rhodes Town in 2006, I caught a bus to Faliraki to attend the festival. The friendliness of all the crowds attending was lovely. A day I'll never forget.

I've used fresh tuna not tinned but tinned can be used but fresh has more omega 3

🤣🤣🤣🤣🤣🤣 I love gherkins myself my gran used to call them cucumber man's penis always had me in stitches as a kid and wouldn't touch them then I realized she said it to stop me eating her gherkins 😂😂

I truly miss my grandmother she brought me up after all the abuse from my dad she taught me to sew wash clean up and most importantly to cook she taught me purpose and humility and reason and respect .

It amazes me how very alike our lives have been,I suffered horrendous abuse by my father,perverse incest lover, bully and child abuser.sent me out begging. He was of.the idea that boys of 12 dont have thoughts, feelings or emotions. Just there for his sick pleasure. Still,that's enough of that disgusting creature. I make everything myself I just buy the ingredients 😂 . I use what's in the house. Always got flour etc I use cooking to keep me focused and calm unless like now I'm under my stars with a large JD and Ice 👍🏼👍🏼 if you want any recepies tell me what you want I'll pm you with list ingredients weights etc no problems

I am so impressed. What a stunning attitude. Most of us would just curl up in a heap and whimper with the news you have had. But to create delicious food is such a sign of…. Hope? Not silly “hoping-for-best” kind of hope but the real hope that gets us out of bed in the morning. Yes please. I often wonder what to do with the last handful of grapes and it never occurs to me cook them. And…. Err…. What is a JD? I have a suspicion that my version is a G&T. Kxxx

Jack Daniels 😂 the reason I have this attitude is simply that I lost both my grandparents to cancer I lost my uncle to cancer I lost my mum to cancer both my grandmother and mum had stomach and bowel cancer my uncle and grandfather had lung cancer it's a case of you can cry scream shout throw things curl up in a ball nothing will change the outcome so don't waste time you could be enjoying with your loved ones holding them close and enjoying every moment you have . Well that's my view anyway .

Am now hungry!! Talking about Tuna, there is a lovely Fijian fish dish, Tuna or Snapper, called Kakoda (said with an "n" before the "d", the missionaries put phonetics of Fijian into written English, not a brilliant job). Slice the fish into thin slices, marinate overnight in lime juice, next day add coconut milk/cream, chopped onion, chopped and de-seed tomatoes and spices to taste. Some people also add chopped peppers, but I think their taste overpowers the fish and coconut. Have a large bowl full with fresh buttered bread.

Sounds nice that's the reason fish doesn't always need cooking if it's sliced thin the acid in lemon and lime cooks the fish . Brilliant idea and very tasty .

I love fish of all description my favourite will always be smoked haddock poached in milk and butter with lashings of the milk and butter on the plate to be soaked up on nice crusty bread mouths watering sorry 😂

One recipe I acquired from my mother , find it difficult to get true smoked haddock these days, they use that dye colouring on many fishes here not the same. Enjoy your Tuna bake I have never had it made with fresh Tuna , most places use tinned tuna . Strange how tinned tastes different to fresh fish even salmon and herrings. I used to do alsorts of cooking , but now its a different style of cooking to suit my health but not my waist line😉

Good on you. I love making real fish pie smoked haddock cod snapper salmon and prawns in a fresh parsley sauce nice thick and creamy , topped with garlic mashed potatoes and topped with grated parmesan cheese mmm now that is a filling meal

They dont even make parsley sauce with the real things these days, usually buy a carton but my fussy sister says they do a good one in one of the supermarkets. Me and my late hubby used to grow our own herbs , both types of parsley and make our own sauce. I can't hack this custard and other sauces made with water , I even like my cheese sauce made with real cheese if I am truthful. I still make my own sheperds pie occassionally. Its so easy to make a stew or a curry in a slow cooker. I have a freind who is over 90 and cooks for herself most days and cakes for her family no shop bought.

I always use fresh flat leaf parsley it's all I can get but it's fresh but I also use celery tops aswell adds a hint more flavour . My stepfather used to buy from the English shop bisto parsley sauce like you said add water sorry it went in the bin own made is simply the best . I always make fresh shepherd pie I get a leg of lamb boned and minced and believe me it's well worth doing the meat is beautiful . And when I make my gravy I always add a touch of mint mmm

The couple were a little surprised but I had a visitor an hour after dropping off the cake demitri came over to thank me for such a beautiful cake and informed me his wife took the cake minus his piece to her church after meeting to share with her friends who she goes church with . That was a nice thing.

It seems to me all your posts are coming full circle, and well deserved may I add.

I wanted to send some kind words after your recent news, but I hadn’t the words to express my feelings clearly. You deserve the best. Keep strong.

Carry on cheffing, my mouth is watering, your tuna bake reminded of a dish I bake myself called Salmon Soufflé 🤣😂 breadcrumbs, eggs, milk, it will b on the menu this week thanks to you, my husband will b delighted.

I'm glad you feel I've done something positive for you, the people here are fantastic it's like a family with many families. I'm happy if I can put a smile on faces we've all got serious health issues and all deserve to feel as normal as possible and realise that your not alone unfortunately we don't all have the chance to stay the course which isn't easy. I have good days and bad but I cook to focus I star gaze every night to gain peace that's what gets me through the day

One thing I don't miss about UK hospitals waiting for information . Here you seem to know on the day . Mind you there's no waiting for appointment for scans blood works x-ray etc I had my last MRI and by the time I left the imaging center to the oncologist he had the results in front of him . They may lack a lot of things here but the doctors and equipment is top dollar

How are you today. Have you been baking again?I’m disgusted that I’ve got to wait. I’ve got macular degeneration and my optician thinks it’s beginning to turn into wet macular. I’ve waited nearly two weeks for an appointment and I’ve now got to wait two weeks for them to send me a letter. According to the Macular Society it’s deemed as urgent because you can lose your sight very quickly. Before lockdown you would go down within a week and get it sorted. Now it’s weeks.

The government really screwed up the health services . My heart goes out to you . When I had my first appointment with the doctor five years ago within minutes I had a list of appointments all in the same day it was crazy . My stepfather had an appointment with the optomologist next day he was in Athens having cataracts removed. Yes I've been busy today I'll show you

It sounds like you should have a whole one you certainly deserve one. COVID as caused absolute Chao's globally , it's beginning to look like we will be going into lockdown again as soon as season is over because we've had so many cases here but because we depend on tourism to survive the cases are kept quiet . You won't believe how many tourists turned up with COVID

I don’t think they are too worried about Covid here any more because the vaccine is protecting most people. They’ve got a new vaccine out that will protect against the two main viruses. It’s going out into the homes of people who are housebound. I think there’s more cases here than they are saying but if it’s as mild as the ones that I know have had it then it’s nothing to worry about. The cake will be fantastic. Thank you. 😄

Tuna pasta bake is so quick and simple and wholesome. The cake went down well as the elderly lady across the road who I gave it to gave her husband a small slice and took the rest to the church meeting and shared with fifteen other ladies and the father all enjoyed it and she explained where it came from they were shocked 😂😂😂

I'm feeling a bit emotional today buddy if I'm honest , I was told to expect a bit of an emotional rollercoaster for a bit while absorbing the information. I have not slept yet 😹 at seven this morning it was 39 degrees by two it was high 40s so bloody hot 🥵🥵🥵🥵🥵 no breeze and here I am sat on a dinner chair in front of the fridge freezer both doors open in my boxers with a fan blowing cold air at me 😂😂 not a pretty sight

Now is that a chicken souvlaki or pork 😂😂 and wouldn't it make sense to wrap you in tin foil leave you walking in circles for an hour 🤣 you would be evenly roasted and tender and the meat would drop off the bone 😂😂😂 lot less painful than setting on fire 😂😂😂😂😂
