I do use extra virgin olive oil but not too much. Then I do not have the heat on so high and add water to stop burning.

Started to cook spiced red lentils and add vegetables and eat it with Basmati brown rice. I cook the brown basmati rice in boiling water for 20 minutes without salt and then add salt and further boil the rice for 5 minutes. That way the outer skin is not hard and slightly bitter. Even my husband has become accustomed to Waitrose organic basmati rice as it has a pleasant mild nutty flavour.

Indian lentils are green and often curried.

Thought I'd share this on the forum to help with diet ideas. I find when I have vegetables left in the fridge I can come up with ideas for a health heart meal.

Rose Elliot's books have been a good send.

One recipe I particularly like is her Mexican ratatouille with rice. Obviously brown rice for a healthy diet. However, I don't like aubergines so I give that a miss. I chop the onions finely, cut peppers and courgettes in very small pieces, almost square like. Add1 or 2 tins of tomatoes, depending on amount cooked.s You can leave out the spice and eat it with spaghetti and then eat the left overs the next day by rewarming and adding chilli and then eat with brown rice. I use virgin olive oil but only a little or enough to fry the onions. Drain if you have poured to much. Always add water not oil to stop burning.

Now I shall take a break from giving advice but hope this has been useful.
