I hope this is not a dumb question. Since PSA comes from prostate cells, wouldn’t the PSA doubling mean there are twice as many cancer cells as before?

It's not 1 to 1 like that - some cancer cells put out more PSA than others - some put out none.
Although the PSA is helpful as a tumor marker, you have to rely on imaging to determine the progression of prostate cancer, not the PSA. My doctor talks about not "chasing the PSA". Some guys are diagnosed with sky-high PSAs and live many years after diagnosis, while others with low PSAs have more aggressive varieties.
